Kombucha, Spice, and Everything Nice
This seasonal brew is perfect for dinner parties, New Year's bonfires, and more! This cocktail requires a little extra work, but the finished brew is worth every sip.
- 1 cup pitted and sliced plums (about 1 1/2 large plum or 5-6 small)
- 1 cup sliced figs (about 5-6 figs)
- 3 star anise pods
- 1 tsp fresh grated ginger
- 1 tbsp raw unpasteurized honey (substitute agave or maple syrup for a vegan option)
- 4 ounces of vodka
- 2 cups kombucha (unflavored)
In a small saucepan, gently simmer plums, figs, ginger, and star anise pods for 7-8 minutes. Fruit should be softened, but not congealed. Place in fridge to chill.
Once cooled, separate the anise pods from the mixture and transfer to a blender. Throw in a dash of honey and blend until finely pureed. Strain into a small bowl. Add ice cubes to four 8 ounce glasses and spoon 3 tablespoons of the mixture into each. Top with 1/2 cup of kombucha. Stir well. Decorate with thinly sliced strawberries and drink up!
